Fried sweet yellow plantains are the popular and favourite side dish in many African or Caribbean homes. It can also be used as a snack. This snack is crispy externally, soft inside and sweet in the mouth. Children can't have enough of this snack, they just love it.
Cut the plantains. In this picture, you can see the different ways to cut them.
Heat oil in a large frying pan on medium heat. Test if the oil is hot enough by carefully putting one slice of plantain into it. If the oil bubbles on contact with the plantain then the heat is right for frying. If not, wait for a few more minutes and test again. In case the oil is too hot, reduce the heat to the lowest level and wait for a few minutes, then test again.
Fry the plantains in batches for 2 minutes on each side until golden brown, then turn the other side. Don't overcrowd the pan.
Remove the plantains carefully from the oil using a slotted spoon and transfer them into a tray lined with a paper towel.
The fried plantain can now be served with roasted chicken/fish or with a stew of your choice. Enjoy!
