Tomato stew is a basic stew that is regularly cooked in many African homes. It can be made with meat as well as with fish. This stew can be enjoyed with pasta, rice, plantain, or another side dish of your choice.
Pour the oil into the pot, then the chopped onion, and simmer for about a minute.
Add tomato to the pot and cook over low heat for about 15 to 20 minutes. Remember to stir the mixture regularly or it could burn.
When the tomato is cooked, add the chopped garlic, mixed herbs, and white pepper. Stir and let the mixture cook for about 5 minutes.
Add the seasoned salt, pre-cooked meatballs, chopped spring onions, curry powder, and chilli powder if necessary. Add water and stir. Let it simmer for a few minutes.
Taste the sauce, if it is not salty enough, add a little salt; if it is heavy add a little water to the consistency you want.
