Potatoes and red beans is a popular meal in Cameroon. It is a mixture of pre-cooked beans and potatoes in a tomato-based stew. It can be cooked with or without meat, but I prefer to cook it without because beans are already rich in protein.

This recipe has some similarities with my two other recipes with beans: the popular beans stew and mashed plantains and beans

What ingredients do you need?

The two main ingredients for the Potatoes and red beans stew are potatoes and beans. You also need secondary ingredients like tomatoes, ginger, leek, celery, garlic, white pepper, Pebe (African nutmeg), Prekese (fruit 4 sides/4 cotes), country onion, salt, and oil.

How do you cook?

First, you need to pre-cook the beans if you are using dry beans. When cooking dry beans, I always soak them overnight in order to reduce my cooking time. Secondly, peel the potatoes, wash and put them in a siever. Sprinkle the potatoes with salt (to remove the excess water) and put them aside. Then chop the onion, blend the tomatoes (or chop them if you prefer), blend all the other spices together, and put them aside. Potatoes and beans

Ingredients
  

  • 2 kg potatoes
  • 2 kg pre-cooked beans
  • 1 big onion
  • 400 g tomatoes
  • 20 g ginger
  • 6 garlic cloves
  • 1/2 steek leek
  • 1/2 steek celery
  • 4 seeds country onions or 1 tsp country onions powder
  • 2 Pebe
  • 1 tsp white pepper
  • 1 tsp fruit 4 sides/Esese/4 cotes/Prekese
  • 2 bay leaves
  • 200 ml oil
  • salt to taste

Instructions
 

  • Pour the oil into the pot, then the chopped onion, simmer for about a minute.
  • Add the chopped tomato into the pot and cook over low heat for about 5 minutes. Remember to stir the mixture regularly or it could burn.
  • When the tomato is cooked, add the salt and peeled potatoes and stir fry for about 5 minutes at low heat.
  • Add the blended mixture of leek, celery, garlic, ginger, white pepper, country onion, Pebe (African nutmeg), and fruit 4 sides. Stir and let the mixture cook at low heat for about 10 mins.
  • Add the beans and bay leaves. Stir slowly to avoid mashing the potatoes. Add more water if necessary. to your taste. Taste the sauce and if it is not salty enough, add a little salt; Let it cook for another few minutes until it is done. The meal is ready. Enjoy!
