Easy African Peanut Stew

African Peanut Stew is one of the favorites of African stews. This stew is creamy, delicious and easy to cook. It can be enjoyed with rice or plantain.

To cook this stew, you need peanut paste. When buying the peanut paste, choose the one made just from peanuts, with no added sugar, salt, or preservatives. Alternatively, you can make your own paste by roasting the peanut on low heat, letting it cool, and then ground it.

I have used chicken thighs to cook this stew, you can use another kind of meat or fish if you prefer. I prefer roasting the chicken to avoid fat. This stew can also be made without added oil since peanuts contain oil. I have used a tiny portion of oil here.

Ingredients
  

For the chicken

  • 1 kg chicken
  • 2 tbsp green seasoning (recipe on the blog)
  • salt
  • 1 tsp black pepper

For the stew

  • 200 g peanut paste
  • 1 onion
  • 1 tbsp tomato paste
  • 2 tbsp green seasoning (recipe on the blog)
  • 1 tsp curry powder
  • 2 tbsp oil
  • water

Instructions
 

For the chicken

  • Clean and wash the chicken. Put them into a bowl, salt, white pepper and green seasoning. Mix them well and set aside to marinate.

For the sauce

  • Pour the oil into the pot, then the chopped onion, simmer for about a minute.
  • Add the tomato paste to the pot, let it simmer for a while. Add water, salt, and peanut paste. Let the mixture cook for a while, then stir. Let it cook again for a few minutes.
  • Add the green seasoning, curry powder, white pepper and stir, if the sauce is too heavy, add a little water to your taste.
  • Let the sauce cook for a while and taste. Add salt if necessary. The sauce is ready!
